About the course
The qualification is for anyone wishing to gain essential understanding about food safety relating to food preparation and handling within the catering and hospitality sector. It has been developed to meet the new occupational standards in Food Safety for the sector and recent changes in legislation, which requires all food businesses to have a food safety management system based on HACCP principles such as those recommended in the Food Standards Agency’s "Safer Food, Better Business". Previous experience or knowledge is not necessary to enrol.
This qualification provides essential and up to date food safety knowledge for anyone working in a role relating to food preparation and/or handling or starting a new job in the catering and hospitality sector.
The syllabus covers topics including:-
· The food handler’s monitoring role within food safety procedures
· Personal hygiene
· Legal responsibilities
· Food safety hazards, including allergens
· Keeping the work area clean and hygienic
· Safe receipt and storage of food
· How to prepare, cook, hold and serve food safely
There is a single multiple-choice examination for this award, consisting of one examination comprised of 30 questions. The duration of the examination is 45 minutes.
